Artisan Takeaway Bakery Near Louth, Lincolnshire

This is a long one but we feel it conveys how we feel and things we need to change 🥹

We bake the majority of our menu from scratch, using simple ingredients and no preservatives where we can help it. A couple of our savoury bakes use pre-made pastry – with just the two of us, that’s the only way we can keep up with demand – but the fillings are always made from scratch, by us. We’re small, independent, and properly passionate about what we do: homemade in the best sense of the word.

But honestly? We’ve lost a bit of ourselves over the last few months. Publishing a set weekend menu days ahead sounds simple, but it isn’t – there’s planning & admin behind every one: writing it up, then posting it across social media, our website, and our email list. And once it’s out there, it boxes us in. Some of our best bakes come from creativity and flexibility in the moment – often on a Sunday morning, when the ingredient cupboard is running low and we have to think on our feet.

Add in rising costs, wrist surgery, and a brutal heatwave, and it’s been a tough few months to manage. With the bakery shop refurb coming up, we’re making some changes so more of that flexibility and creativity can shine through. More on that soon.
